For 3 labs per month, you as the student will be expected to reflect on what you've done in class by analysing the recipe. Your 3 LAB ANALYSIS need to be completed by the end of each month (September- January). Each lab is out of 9 marks.
Create the following headings and be sure to answer to the best of your ability.
2 tips for success (Method/Procedure) - "What did you do while you were cooking that helped your product to turn out well?" (2 marks)
If someone was paleo, vegetarian, vegan or celiac/gluten free, find a recipe that would suit this type of diet/lifestyle. Be sure to reference WHERE you
found the recipe. ex. www.gimmesomeoven.com (1 mark)
3 ways to make the recipe healthier, specific to INGREDIENTS, and WHY each is healthier- "Are there ingredients I could substitute to make the recipe healthier? Are there ingredients I could ADD to make the recipe healthier?" (6 marks)
EXAMPLE:
Recipe: Chocolate Chip Cookies
2 tips for success:
1. Make sure that cookies are baking in the middle of the oven so that they cook at the same rate.
2. Keep cookies the same size so that they bake at the same time.
3 ways to make the recipe healthier and reasoning.
1. I would add walnuts to increase the amount of protein in the recipe.
2. I would use unsweetened baker's chocolate instead of regular chocolate chips to cut back on the sugar content.
3. I would use whole wheat flour instead of enriched white flour because it contains fibre and vitamins such as folate and riboflavin (which white flour doesn't.)
1 alternative recipe for someone who is Gluten Free/Celiac:
"Yummy GF Chocolate Chip Cookies"- www.foodandwine.com
Ingredients
Make Ahead: The cookie dough can be tightly rolled with plastic wrap into a log and stored in the freezer for up to 2 months. To bake, remove the dough from the freezer and slice into 1/2-inch pieces. Place on cookie sheet, allow to defrost for 10 minutes, then bake for 10 minutes.
